Next level nanacakes (aka healthy, no-flour pancakes you’ll be obsessed with)

PANCAKES!!!

You’re probably thinking fluffy, yummy goodness.

BUT, if you’re following any foodie bloggers on IG, you’re probably also thinking NANACAKES.

I love nanacakes.

If you haven’t heard of them yet, they’re pancakes made with 2 ingredients: eggs + a banana.

EASY.

No flour. No added sugar. Super simple.

These are next level nanacakes (LOL!).

Think nanacakes + extra protein + extra fiber + omega 3s + a bunch more flavor—& they’re just as quick to throw together as your 2-ingredient nanacakes.

Here’s the breakdown:

NEXT-LEVEL JOYFETTI NANACAKES

INGREDIENTS
(makes 1 serving – multiply by 2 for 2 people, etc)

  • 2 eggs (preferably organic & pasture-raised)
  • 1 banana
  • A bunch of chia seeds, hemp seeds, & ground flax seeds (pour it in!!! go crazy. you can wing the amount, it doesn’t need to be precise)
  • Pumpkin pie spice (or cinnamon)

+ olive oil spray

The chia seeds & ground flax seeds provide omega-3s, fiber, & magnesium. Plus, the ground flax seeds help thicken the batter kind of like how flour would if we were using it—so I pour in a BUNCH of ground flax seeds.

The hemp seeds provide a ton of additional protein, fiber, magnesium & iron—plus hemp seeds have a yummy, nutty flavor that I love. I get these.

DIRECTIONS

  • Whisk all the ingredients together in a large bowl. I like to keep some chunks of banana in there so I don’t make it perfectly smooth. This saves me time too (ha! I’m all about it)
  • Spray a skillet with olive oil and heat it on high heat. You want the skillet to look kind of soaked—so spray a lot of olive oil. As soon as it heats up (this will happen REALLY fast), lower it to medium heat
  • While on medium heat, use a spoon to pour little circles of batter onto the skillet like you would normal pancakes
  • Since I usually make a bunch and only 3-4 fit in my skillet at a time, I usually spray the skillet (again, liberally) once or twice more while making all of them. I spray the skillet between each batch so the 2nd, 3rd, etc batches don’t stick to the pan.

Let me know if that makes sense or if you have any questions! I also love topping them with some honey and fresh berries, & some more pumpkin pie spice/cinnamon. SOOO GOOD.

I make these alllll the time during the weekends.

How to make perfect (& easy-to-peel) hard boiled eggs

A little over a year ago, Arrash & I moved into our first place together and all of a sudden I couldn’t make hard boiled eggs anymore.

The shell kept sticking to the egg, so it’d take off half of the egg white when I peeled it.

It was so annoying and such a waste. It didn’t look pretty, as you can imagine, & it threw off the texture of the egg because the egg wasn’t smooth when I peeled it.

I couldn’t figure out what was different—the stove? the heat? the eggs?

I tried adding more salt to the water while I boiled it, but it didn’t work. It was still sticky. So then I thought: OLIVE OIL.

IT WORKED.

Now that we’re in our new place, I still use this trick. The other day I hard boiled eggs for us & Arrash even mentioned how easy they were to peel.

He said I should put it on the blog. Lol, I said, “I know” ; ) So here we are.

Such an easy tip:

To make perfect, easy-to-peel hard boiled eggs, bring water, salt & OLIVE OIL to boil. The olive oil is KEY for making it easy to peel.

Once the water’s boiling, add the eggs, and lower the heat to medium. I usually use a spoon to lower the eggs into water, slowly, one at a time. Depending on your stove, and how you like your eggs, you may want to cook the eggs for 4-8 minutes. If you want it softer or a bit runny, 4-6 minutes should work. After they’re cooked I put them in bowl of cold water to cool them down.

So simple.

I love having hard boiled eggs in the fridge because they’re a great source of protein—6 grams per egg, which is 12% of the daily recommended value.

They’re easy to grab in the morning to have with coffee, or during the day as a snack, so I usually make a batch once a week.

They’re definitely one of those items we almost always have in the house.

Okay, I’m off to get ready for bed. I’m planning to start the day off early tomorrow—fingers crossed ; ) so I’m heading to bed a bit earlier. Sweet dreams! xx

Let’s get nutty… A quick & easy breakfast ( or naturally sweet snack! )

HI GUYS!

If you’re following along on Snapchat you already know this is one of my go-tos for breakfast.

I LOVE starting my day with coffee, but not on an empty stomach so I always make a quick & easy breakfast to have with my coffee.

One of my go-to’s are hard boiled eggs, but sometimes I need to mix it up a bit—& this is perfect way to do it!

Lately, I’ve been putting almond butter, bananas, gr8nola, and a sprinkle of pumpkin pie spice ( not pictured ) on toast & it’s SO delicious. You guys have to try it.

I like gr8nola because the ingredients are clean & simple ( I always check ingredients! )

Here they are, straight from the label:

whole grain oats, honey, organic virgin coconut oil, almonds, sunflower seeds, dried unsweetened coconut, flaxseed meal, sea salt, cinnamon, stevia leaf extract.

So good, right!? & it’s delicious.

P.S. If you prefer, you can of course use peanut butter instead of almond butter. I like both.

I also love that I typically have all these ingredients in the house—makes it easy to have breakfast.

I love having this breakfast because it’s filling ( but still pretty light ), easy to make & naturally sweet.

Sometimes I even make this during the day or at night when I want something sweet, but still healthy.

Sunday Splash: So Much Food & Catch Phrase

This weekend definitely had a theme ⇢ lots of food—& A LOT of CATCH PHRASE ( my newest obsession! )

Do you guys know Catch Phrase?

For those who don’t… It’s a word guessing game—there’s usually two teams, and you’re trying to get your teammates to guess whatever word or phrase you’re given without saying the word or phrase… You have to explain it to them verbally.

You can find it on Amazon or you can use an app, like “Phrase Party” on your phone ( that’s the one we used ).

Once your team guesses the word or phrase correctly you pass it on to the other team, kind of like Hot Potato, and you keep doing that until the buzzer goes off. Whichever team is holding it when the buzzer goes off, looses the round.

Not surprisingly… We got super into it, and pretty LOUD. LOL. It’s really fun.

To start the weekend we went to this DELICIOUS restaurant in downtown Mountain View called Shell Shock Restaurant on Friday, and it was perfect because I really wanted fresh seafood & a spicy / refreshing cocktail.

If you’re around Mountain View, you HAVE to check it out.

Order their ‘Hot & Cold’ cocktail if you like spicy drinks. It has Hornitos Plata, cucumbers, jalapeños, & fresh lime juice… It’s really good!

I spent Saturday with family… We BBQ’ed, caught up with each other, shared stories, and played Catch Phrase ( Phrase Party ) until a little after midnight. It got pretty competitive. ; )

The theme continued on Sunday. The girls & I went to brunch at Kitchen Story SF and then had a little picnic at Dolores Park… With more Catch Phrase. LOL. It’s addicting!

By the way, I felt very San Francisco-y spending the day at Dolores Park. AND… THERE ARE SO MANY CUTE PUPPIES THERE! I basically oohed & awwed the entire time we were there. Minty came with us too, obviously. ; )

But… Let’s not breeze through brunch because brunch at Kitchen Story is AMAZING.

Since I’m not having eggs ( aka no Benedict for me—I’ll share more about this soon ) I ordered their Veggie burger without cheese and without ailoi. It was DELICIOUS—so was their Bloody Mary. It was spicy, just the way I like it.

Love List: Holidays That Make You Indulge in Guac (LOL) & Snapchat

HI GUYS!

You know what’s fun about social media (particularly Instagram)? You hear about the wackiest “holidays”. Like today was National Pig Day (haha, WHAT?) & Peanut Butter Lovers Day, LOL. I feel obligated to give Minty peanut butter now… No? ; )

Since I do social media marketing for a living, I consider these holidays when making content calendars & creating content for my clients—if there’s a wacky holiday that’s likely to trend on social, and it’s in line with my client’s brand/products, I’ll create content around it so my client can contribute to the conversation.

BUT! I have to tell you there are some “holidays” that I’m just like… WHAT?!? A day to celebrate PB lovers or pigs is fine… But what is Take it in the Ear Day? YES. That’s a thing, apparently.

LOL.

Take me back to… Cleveland!?!

Why I want to visit Cleveland again_joyfetti.com

When I think about traveling I picture breathtaking seascapes in Greece and charming cafes with bright, blossoming flowers, and fresh, mouthwatering foods.

What I don’t picture? Ohio.

BUT! I’d love to take another trip to Cleveland! I spent 6 days (& 5 nights) in Cleveland back in August for work and the city surprised me, in a good way.

They have a booming food scene, places like House of Blues and Rock & Roll Hall of Fame, and gorgeous sunsets. Plus, there were two games happening while we were there so it was extra lively—I love when there’s lots of people out & about! (aka Summer ; ))

So the food… OH. MY. GOD!! Urban Farmer. I went to Urban Farmer 3 times in less than 24 hours. IT WAS AMAZING.

Their Charcuterie Board + Cheese Plate… GORGEOUS. DELICIOUS. I can’t rave about it enough! If you’re following me on Instagram, you already know I’d travel back to Cleveland just for that. It was THAT good.

Even their simple, Local Greens Salad was AMAZING (it has popped quinoa! YUMMY!). Can you tell how much I enjoyed this place? Ha!

I flew into Cleveland on a redeye, and got in super early Tuesday morning, and was planning to head home almost just as early 5 days later.

Sunday morning was interesting… I missed my flight. I woke up 10 minutes before it was scheduled to take off. (We had a long night at Urban Farmer… LOL. We stayed at Westin most of the trip.)

I was furious at myself.

Upset.

REALLY upset.

I wanted to see Minty.

But after I had my little meltdown, I decided to make the most out of the day (the next flight to SFO wasn’t until later that night). So I showered, got dressed, and went downstairs to Urban Farmer (surprise!) for a relaxing & delicious brunch. Their team is amazing—so sweet, so thoughtful! They make the experience that much better.

While I was chit-chatting with one of their hostesses, she recommended their Bloody Mary bar—I’m not one to turn down a recommendation, so I took her suggestion. ; )

You’d think with all the brunches I’ve had, I’d know what to do… NOPE! I was a deer in the headlights at the Bloody Mary bar. I had NO IDEA what to do. The first thing I put in my glass (they give you a tall glass with vodka & ice, and you build your drink from there) was an olive—BAHAHAAA! It was the only thing I recognized right off the bat. But once I poured in the tomato juice I got real creative (aka no inhibitions, at all.) I put in a TON of fresh-squeezed lemon and lime juice, a TON of hot sauce (I only like ’em spicy!), and some other yummy looking ingredients, and of course celery, because that’s what makes it cute, more olives & a lemon for garnish. It was delicious & spicy. I think I did pretty well… What do you think??

IT’S. THE. BEST.

Bloody Mary at Mission Rock Resort in SF

Lately, I’ve been a big fan of Mission Rock Resort. Their Fresh Dungeness Crab Benedict is DELICIOUS & their Bloody Mary (The Bacon Bloody) is one of the best I’ve had—plus, they’re by the water, which I LOVE!! And you can easily walk to AT&T Park from there.

SOI’m super excited to share my take on the classic PB&J!

I give up the excess sugar, make a few tweaks, and invite my buddies, chia & ground flax seedshello, omega-3 fatty acids, fiber & magnesium! It’s a party in your mouth, without the guilt.

Here’s what you need:

+ Organic Gluten Free Brown Rice Bread (I get “Food for Life” from Trader Joe’s), toasted (I like it super crunchy!)
+ Trader Joe’s Organic Raspberry Fruit Spread
+ Trader Joe’s Organic Peanut Butter, creamy no salt (For JOYFETTI PB, mix in chia and ground flax seeds—so good!)
+ Chia Seeds
+ Ground Flax Seeds (I like Spectrum Essentials Organic Ground Flaxseeds)
