How to turn king oyster mushrooms into vegan pulled pork (quick + easy recipe!)

This is a recipe I’ve been making over & over again. It’s quick, simple, & delicious. It’s also super versatile—it can be used in so many different ways!

So let’s get right to it: here’s how to turn king oyster mushrooms into delicious, craveable vegan pulled pork.

You can use this recipe to make as much or as little as you’d like, & it doesn’t require measurements.

  • Preheat oven to 400°F.
  • Rinse the king oyster mushrooms under water and pat them dry. Then use a fork to shred them into thin, stringy pieces. [Video]
  • Toss the shredded mushrooms with avocado oil & season with black pepper, garlic salt, paprika, & a pinch of cayenne for heat.
  • Line a sheet pan with parchment paper & spread the mushrooms out in an even layer.
  • Bake at 400°F for 20–25 minutes, checking in on them after 15-minutes.
    • I usually bake them for 23 minutes for some crispiness.
    • The exact cook time will depend on your oven, how thick or thin you’ve shredded the mushrooms, & how crispy you like them.

From here, you can use them however you’d like.

We’ve enjoyed them so many different ways. Some of our favorites are on nachos, in tacos, and simply on their own dipped into Dijon mustard.

You could also dip them in BBQ sauce, use them on pizza, add them to a burger, or include them in a salad… There are so many options!
