Crisp superfood salad

If you’re looking for a crisp, refreshing salad with bites of crunch & creaminess, this salad checks all the boxes—& it’s nutrient-dense, filling, & quick to put together.

I’ve been making this salad on repeat (which you already know if you’re following on IG), & it is SO DELICIOUS!

You can customize it however you like.

Here’s the base recipe:

  • Spinach (or baby kale or mixed greens)
  • Baked tofu
  • Granny Smith green apples (use a mandoline for a fun, crisp texture that’s also so pretty imo!)
  • Red onions (use a mandoline for this too)
  • Miyoko’s vegan classic chive cheese (so creamy & delish!)
  • Raw pumpkin seeds
  • Raw pistachios
  • Goji berries

For the dressing:

  • Extra virgin olive oil
  • Nutritional yeast (fortified–we use Bragg’s. It’s a great source of B12 & it’s a complete protein.)
  • Fresh squeezed lemon
  • Maple syrup
  • Hemp hearts
  • Salt & pepper

It’s quick & simple—& such a delicious combo.

I’ve also made it with fresh strawberries, which compliments the salad so well!
